Turkey Fritters with cranberry sauce

Leftover mashed potatoes have to be the least appetizing of Thanksgiving leftovers, but not in these charming fitters. Garnish with cranberry sauce, and you have a perfect lunch.

Serves 4


1 cup mashed potatoes

1 ½ cups shredded turkey white meat

¼ cup milk

Freshly ground black pepper

½ cup panko


1 tablespoon oil

½ cup cranberry sauce


Combine the potatoes, turkey, and milk in a medium-size mixing bowl. Season to taste with freshly-ground black pepper.

Heat the oil in a wide skillet over medium-high heat.

Form the turkey mixture into patties and coat with panko. Fry on each side until browned and cooked through. Serve with cranberry sauce and a big green salad on the side.
