The classic egg sandwich combines meat, cheese, and eggs on a toasted English muffin. In our healthy version, we replace some of the animal products with roasted red peppers and avocado for healthy fats and antioxidants. It’s big on flavor and much lighter on calories and saturated fat.
2 slices sandwich bread, toasted
½ avocado, thinly sliced
¼ cup roasted red pepper, thinly sliced
1 teaspoon olive oil
Freshly ground pepper
Heat the olive oil in a non-stick skillet over medium heat. Fry the egg, flipping it halfway through to cook the white thoroughly while leaving the yolk still runny.
Top the toasted bread with avocado and the cooked egg.
Then add the roasted red pepper and the remaining slice of bread.
