Yields 4-6 burgers

Burger Ingredients:

1 teaspoon coriander

1 teaspoon cumin seeds

¼ teaspoon red chili flake

¼ teaspoon salt

1 can black beans, rinsed and drained

1 yellow onion, diced


1 clove garlic, minced

½ cup whole grain bread crumbs

½ cup cilantro

¼ teaspoon sea salt

1 whole egg

½ cup yellow corn kernels (optional)

Olive oil

Lime-Chili Mayo Ingredients:

½ cup mayonnaise


1 teaspoon ancho chili powder

1 teaspoon smoked paprika

1 lime, juiced

Additional Ingredients:

Toasted whole-grain buns

Avocado, sliced

Roasted red peppers, sliced

Toast the spices in a large skillet for about 3 minutes, or until fragrant. Remove to a mortar and pestle and crush until completely ground. In the same skillet, heat 1 tablespoon of olive oil over low heat and cook the onion until golden and soft, for about 10 minutes. Add the garlic, and cook for another minute.

Place the onion mixture, salt and spices, breadcrumbs, cilantro, and black beans into a food processor, reserving ¼ cup of the black beans to add later. Pulse until smooth. Add the egg and blend until smooth. Stir in the corn kernels and remaining black beans.

Form the mixture into patties and heat a tablespoon of oil in a large skillet over medium heat. Cook the patties on each side for about 5 minutes.

Serve with the lime-chili mayonnaise on toasted buns. Top with avocado and roasted red pepper slices.
