Big Apple 

Raspberry-Puree-Coated Soft Cheesecake Served with Apple Sorbet


  • 440 grams cream cheese
  • 1 zest of lemon
  • 80 grams sugar
  • 30 grams honey
  • 100 grams low-fat Greek yogurt
  • 1 sheet gelatin
  • 150 grams whipped cream
  • Instructions:

Step 1: Mix together 440 grams cream cheese and 1 zest of lemon. Beat it until it”s soft.

Step 2: Add 80 grams sugar, 30 grams honey, and 100 grams of low-fat Greek yogurt to the soft cream cheese mixture.

Step 3: Bloom 1 sheet of gelatin and 150 grams whipped cream in cold water, and melt in microwave.

Step 4: Use plastic wrap to fold it in and make an apple shape, then freeze.
